New Catering job

It was very good. We had a few small crises arise, but nothing that couldn't be handled. I got another job out of it, and made some great new friends.

It was very tasty. I had about a dozen mousse cups left. We packed them up and one of the sponsor's took them home.
He had just raved over them, so I gave him what was left.

The potato soup was great. I also took my chocolate fountain, and cut up some fresh fruit, bought some grapes, some sugar wafer cookies, graham crackers, marshmallows and marachino cherries. The kids had an absolute ball dipping their treats in the fountain.
I set this up, so that when the kids first got there, and were milling around looking for their table, greeting each other and the girls were showing off their formal dresses, they were also playing in the fountain.

thanks for this. It went really well. My ham that went in my potato soup had been cured with some kind of red food coloring, and it turned the soup a pinkish color, but it was actually quite funny. Didn't affect the taste any.

I purchased a box of those cone shaped water cups that you can get with the water coolers.
Spray them with non-stick butter flavored cooking spray.
Melt White chocolate almond bark in the microwave and then using knife, you "paint" the inside of the cones with the chocolate.

Let it harden, and then peel the paper cone off and you have a shell. If there is a hole in the shell where you missed with the chocolate, I simply put it back into a clean cone, and filled in the holes with fresh chocolate.

I purchased all of my food the two days leading up to the banquet. I started cooking at 9:00 that morning. I finished up the last of the desserts about 15 minutes before the banquet was to begin. Just enough time to race into the bathroom, change out of my jeans and into a clean outfit that didn't have chocolate dripped down the shirt!

They were older teenagers, in the 9th grade and above. Menu was a hit, and I got the job to cook for another adult group that's associated with this one, so I guess I'm back in business!

I love to cook and bake. The more people, the better in my opinion. I can cook for 200 almost as easily as I can for 6.

Yes, I sent several sample menus to the organization committee and they agreed on this one. I used a mixture of white, brown and wild rice and it made it so colorful. The kids loved it. The mousse was definately a hit.

thanks...I ended up getting two more jobs out of that banquet, so it was worth the time and effort I put into it for sure.
