My Apple Sauce Is Missing Something

I made some apple sauce the other day, but somehow it is missing some "kick". I put sugar in and cinnamon. Is there anything else that I should add to make it more interesting? I froze some of it for later use. When I thaw it I thought I could add the "something else" then. Any good suggestions for me? Thanks, Marie

It sounds like you maybe needed LESS of something not more of it. You could try a dash of lemon juice.

Isn't the lemon juice going to make it more sour?

@marlina That's what I would expect. I think you maybe put too much sugar in. And I personally would have gone carefully with the cinnamon as it's very over powering.

@boiboing I find it not sweet enough and do not even taste the cinnamon?? Is there another spice that goes with apples?

You already added cinnamon, so you must add something that goes well with cinnamon, like a little clove, that is also very good with apples.

I guess that would have to be a tiny, tiny amount of cloves.

@marlina Yes, because the taste is very strong. I do not know what a hint of vanilla would add.

Yes, I agree - that's a great idea (so long as you don't hate clove)

I never add anything but a tiny bit of sugar but of course a lot depends on the type of apples you used, I don't like cinnamon in apple sauce. I use nutmeg in my apple pie.

The apples were McIntosh and they were sweet enough when eating them.

@marlina McIntosh are usually very sweet. Surprising that they weren't

Making apple sauce is on my to do list this afternoon. But slowly I am petering out on energy. I think that I'll take a walk outside to feel revitalized, its cold out, so that should get my heart pumping. As for your applesauce, I usually use a tiny amount of lemon juice and I do like nutmeg.

@marlina The fresh air, and I love feel like I'm racing Mother Nature and her pending rain which is close by I think.

Thanks for your suggestions. You are doing today what I did last week. Lots of work. A walk will certainly help you out.

Nutmeg? I never made it, but I love to eat it and I make a sandwich - applesauce with cin/nutmeg and go to town!

I love home made applesauce but just sugar (brown sugar) and cinnamon is what I use.

Maybe I should have used brown sugar instead of the white one.

A little lemon juice would be good to liven it up.

I also suggest a little lemon juice, but it you like it to have kick, perhaps a soupçon of nutmeg?

I love applesauce but haven't had it in awhile. Try adding more sugar to it to give it more flavor or a bit more cinnamon.

Seems everyone here have given the suggestions I would have. I love homemade applesauce and usually only use cinnamon and sugar. Hope you find a way to get it to taste right

It has been years since I made applesauce. I did not care for it as much as the brand I usually buy, Motts!
