Meat Loaf And Vegetables

Today we had a meatloaf for lunch. It had been years since I made a meatloaf, but today was the day. It sounded right to me to make it.
Came with lots of what I call "winter vegetables" and a small Greek salad.
Now, we are full and still have plenty of leftovers for making sandwiches another day.
When was the last time that you had a meatloaf?

I usually make meatloaf every few weeks and love it with mashed potatoes. It's also great leftover for sandwiches. Meatloaf is one of those meals that you can stretch which I love

@marlina Brilliant minds think alike. Just made a meatloaf today and I had written in December that we bought a multicooker. Well it made the meatloaf so tender and juicy and also steamed - not boiled but steamed potatoes real tender. We too ate what we could and will make sandwiches.

It has been around 6 mos or so since I made meatloaf.
It is such a versatile meal and yes, good for leftovers.

@marlina I have never made a meatloaf.Of course I have eaten it.My husband does not eat beef and we make beef items very rarely.,

It had been ages since the last time i had meatloaf here at
W estm inister V illa it was so y uckville I did no t choose to eat the next mea loaf that they served. but we are under new owners and have new cooks who do know how to make great meals so I bet that they could make a very delicious meatloaf.

It has been a long time since I last made meat loaf and ate it. I did have a recipe for baking meat loaf in a crock pot. I made that many years ago and it turned out tasty.

You know what I love about meatloaf? The left overs and making a sandwich the next day to eat.
