Changed up my cookie recipe

Back to the magic flourless cookies. You know, the one that is one cup peanut butter, one cup granulated sweetener or sugar, one egg and one teaspoon vanilla.
When I made it with Stevia granulated blend, they were so soft they fell apart. I also wanted to try something different, with the same basic recipe.
So I took two tablespoons of cocoa powder and mixed it into the one cup of stevia sweetener. I used two eggs, and a teaspoon of vanilla with the one cup of peanut butter. I made the cookies, and flattened them with a glass dipped in granulated sweetener.
This is a good snack for me to have. It is not quite as good as a regular cookie with real sugar, but it will do.

I've seen a recipe much like this recently, that you can supposedly do in a mug or bowl and pop in the microwave to "cook".
Would Agave Sweetener work in a recipe like this?

I have never used it. It needs to be a granulated sweetener. I have not tried any mug desserts but should.

@ScribbledAdNauseum It is not that I want unprocessed, but I want low carb. or no carb. so I can eat it as a bed time snack and not limit myself to one.

@GardenGerty They have so many sweeteners out there now. Have you thought to try the Sugar in the raw? I believe it comes granulated and I think it's supposed to be the most un processed sweetener there is?
You will have to let us know if you do try the mug desserts.

I may not put as much cocoa in it next time, but they came out good and crisp and held together. Hubby loves them.

It has been ages since I had date based candies. I love them. Probably too many carbs for me. Yes, stevia has an aftertaste. I was trying to cover it up with the cocoa powder.

@GardenGerty Carbs are a wierd thing. They give the body energy and go power. A good deal of our diet these days is carbs- BUT whole food carbs like brown rice and beans and carrots and barley. And all of us are getting trimmer by the day.

@sallypup Yes, we have to switch off to the less processed carbs to be healthier. I even managed without trying to lose weight in the holiday corridor of Halloween, Thanksgiving and Christmas. My carb concerns are based on limits my doctor would like to see me follow.

I am told everything in moderation, but I have a hard time being moderate where cookies are concerned. I am supposed to have a protein snack, in the evening. Believe it or not, because they are mostly peanut butter and egg, they are a protein snack.

The egg is the binding factor. Do you just use the whites or the whole egg?

I use the whole egg. I put in the extra egg just for the binding factor as well as the protein and nutrition.

@GardenGerty We use only the white of eggs for making 'floating snow' which is with coconut, sugar, cardamom.

I've done a 3 ingredient peanut butter cookie that was also flourless i believe. I loved it.

Yes, they are and I tend to eat too many of them when I make them, so I had to find something with fewer carbs.
