Well, since February is coming to an end this week and March is upon us, it's time to post my findings of my three recipes I've tried this month in the crockpot for my dinners. I've come to realized, that the recipes from Recipes that Crock are similar, except for some of the ingredients and the cooking time and instructions. So I'll be labeling those selected recipes as Version 1 (Recipes that Crock) and Version 2 (Pinterest) for now on.
1. Baked Spaghetti with Meatballs (Version 1). My grade: B-.
This tasted magnificent after I slowed cooked it, a few weeks ago. I swapped the beef/pork with the turkey to make the meatballs. I did hit a faux pas, when I forgot to add the mozzarella cheese into the meatball mix and added it later and over the spaghetti sauce. Plus my meatballs became more like meatball crumbles into the spaghetti sauce, too.Although I didn't have any spaghetti, I've used bucatini noodles in its place. It tasted delicious since I never had it before.
As for leftovers, I hit another faux pas, when I ran out of leftover bucatini and had to boil it in the pot. Though I've fixed it well with reheating my pasta, it became hard when I ate it. Note to self for next time around: add the cheese into the mix, add more spaghetti for the batch. I hope to try it with spaghetti and see how it tastes. My grade: B-.
2. Zuppa Toscana Soup (Version 1)--My grade: B.
This wasn't a bad soup, though when I freeze dried the ingredients for a few nights, the mushroom juice colored my potatoes. Though the sausage was a bit hot for my taste, I'll be swapping it with turkey or chicken in the meantime. I had to drink a lot of water and milk to help remove the burn in my mouth. My soup looked nothing in the pictures online.
For leftovers, same comments as the main dish, concerning the spicy sausage. I'm going to prep two days before and freeze it for one night next time around.
I hope to make Version B of the Baked Spaghetti with Meatballs and Zuppa Toscana later this spring and will compare notes, too.
3. Chicken Marsala--A+. This came out amazing last week. When I slow-cooked it, it was delicious to have as main dish and even for leftovers. Although I didn't serve it over rice or noodles, it was scrumptious. I don't think I've found anything to nitpick on, since the chicken dishes came out on top in the slow cooker.
Bonus: I did remake my cheesy rotini (x2) earlier this month and had more than enough for leftovers for a second round. Both times tasted better than when I did make it last month. It was hearty and filling.
As for my March meals, since I've returned to the gym to have leftover crockpot meals from Sunday or Monday nights, here's what I have lined up to make starting next week with a chicken dish, a turkey dish, one pasta, one breakfast and one dessert: Ritz Chicken (only on Pinterest), Stuffed Peppers with Ground Turkey (Pinterest), Veggie Lasagna (Pinterest), French Toast Casserole (both sites), and Chocolate Lava Pie (both sites).
What's on your crockpot menu for March, this spring?

I'll be trying it out in two weeks I think. If you're interested in the recipe, I'll be happy to message you the website, if you're not on Pinterest. I want to try the chocolate lava cake next week, while I make some room in my freezer to reserve space.

I had a crock pot -sold it at a yard sale. Not fond of crock pot cooking. I always say I am retired and have time to cook 'normal'.

@KristenH Most of the things I enjoy eating can't be cooked in a crock pot.

Thanks. For any type of church meal, whether brunch or dinner, my church uses 3 crockpots for soups, like for this week's Ash Wednesday meal. My church sometimes has pot luck meals. I might try it sometime, though I make enough for 2 people.

haven't thought about what will be happening in March. Your cooking sounds delicious. I like to make omelets that look like cakes when they come out in my multi-functional pot.

This sounds really interesting! I have three crock pots of varying sizes but I don't use them often enough. What made you want to do this?

Well, my brother mentioned the idea of having a crockpot last summer for a Christmas idea. I thought it sounded divine to try simple easy cooking meals, when I'm at church or at the gym. It saves cooking time for me every day. I only use it 2x a week.
