May Crockpot Recipe report card

Mylotters, it's that time again, since May ended last night and June has begun around here. It was a pretty great month for my experimenting with new crockpot recipes. I had three hits and one incomplete, due to needing eggs for my dessert. 1. Crockpot Mushroom Swiss Chicken--A+. It's just like the Creamy Mushroom chicken I did back in January, only with a slight alteration. Instead of fresh mushrooms, it asked for sliced and canned mushrooms. You just need to crumble cooked bacon pieces and add a slice of Swiss cheese. Though my melted Swiss cheese was hard to see in the cream of chicken soup, and my bacon crumble wasn't perfect but okay, it was deliicious in every bite. Leftovers was fantastic too! 2.Crockpot Chicken Parmesan--A+. Though I've made it regularly last year in the oven, this came out better and easy to do. I've used my angel hair spaghetti to go with my meal. As for leftovers, I've used my bucatini for my pasta as it came out perfectly (not hard!) this time around. Another delicious meal. 3. Crockpot Hot Turkey Sandwiches with Pasta Camprese salad--A-. Though this deal was mainly to serve more than one people, I've made enough for myself. Real simple to make with even deli turkey meat. THough messy, it was perect to fit on the bun. And the salad wasn't bad either. I did have enough for leftovers, maybe a bit too much, since I had to use two paper plates. Next time, I would use half a can for the cream of chicken soup. ANd the salad leftovers was very good too. 4. Crockpot Hot Fudge Brownies-I. I wanted to make it for my birthday dessert on Tuesday night, I had accidentally broken a whole carton of eggs, when it fell over the shelf this past weekend. So I'll be making those brownies on Saturday and add it to my June report card at the end of the month. AS for my June recipes, I'm doing instead repeats for the past four months with these four dishes for June: Creamy Hawaiian Chicken (this time I would use a can of crushed pineapple, not chunked), Ritz Chicken (hoping the Ritz coating comes out better this time), Chicken Marsala (trying to get it right) and Spaghetti with Turkey Meatballs (will be using spaghetti for both main meal and leftovers.) I don't see how a Ritz coating on chicken will come out well in a crock pot which holds the moisture and has it drip back down. You'd do better to bake it in an oven to get the coating crisp.

Well you have to add it to the butter mixture and then coat the chicken. That's what the recipes said to do. If there was an oven version, I would try it. It looks so easy and simple in the photo.

@Marty1 Thanks Jen. I usually have leftovers for Wednesdays, when I make enough for 2 in my 1.5-quart crockpot on Sundays or Mondays. Poor hamster.

I enjoy using my crock pot, as just put everything in the pot and can clean the house while making dinner. Saves time and even made turkey meatballs in it. They were tasty. I can't wait to hear about brownies, as have posted photos of one of my favorite treats from the oven about a month or two ago.

I haven't made turkey meatballs in my crockpot yet. Maybe I can try to do it in my small 1.5 quart crockpot. As for brownies, I'll do it tomorrow afternoon to have for dessert tomorrow night.

I don't have a Crock pot although I'm aware of it's convenience but I'm surprise that you can "bake" brownies in it. I occasionally bake for my grandchildren but I use an oven.

Yes you can. I've found some dessert recipes online like Pinterest for it. You can do granola too. Well an oven is good too.

Those all sound really good. Did you ever perfect your lava cake you kept trying to make? I made pulled pork and deer in the crock pot last week. Tomorrow I am making beef stew in it hopefully.

Not yet. That would be next month for sure. If I can do it, I would love to try raspberry lava cake before fall. That sounds delicious. Not sure about the deer. Go for it.
