I'm Not a Broth Girl, So My Soup Was a Bit Thin, but Still Pretty Good

JJ shared his link for Potato Soup with me recently. He wrote his discussion a year ago, but I missed seeing it then. It sounded pretty good and as I had some potatoes left from our last bag, I decided to make us a batch too.
Once I got the potatoes out I realized there weren't enough left, so I
had my husband pick up another 5lb bag too. We peeled about ten decent sized potatoes which I cooked until they were done. I will interject and say that I must not be that good with reading recipes. I read his when he shared the link, but even though I remembered the basic ingredients I didn't follow it to a T. Lucky for me, it still was good. But...
Once the potatoes were tender I scooped some out to start blending. I said that I'm not a broth girl because I use water for most of my soups but I happened to have some left over broth on hand in the fridge, so I added that to the taters in the blender. My husband and I both wanted to have some chunks of taters in the soup, so I kept some out in a different pan. I should have poured some of the water out but while blending them it didn't look like there was enough liquid, so I kept it. Once I added the blended taters with the broth it brought the liquid almost to the top of the pan.
I added the sour cream and whisked it in and then also added about ten ounces of shredded cheese and when I ran out of that I put in about six slices of Muenster. I wasn't sure how that would flavor it, but it didn't seem to matter. It wasn't until later when I realized his recipe called for blending the sour cream and cheese right in with the potatoes and broth.
It still seemed a bit on the thin side when we were getting ready to eat. But, now a few hours later after it's been cooling off it's thickened a lot more.
I served it with polish sausage on the side. i thought about adding that to the soup and it would probably have been fine, but no need to turn off the other eaters. I still have a lot left if anyone wants to come over for a bowl. There's even enough for me to take some to work tomorrow when I eat my lunch.
I did a little shoveling of the porch, ramp and around the cars. But I decided to wait until the morning to clean off the cars for church.
1. Buy potatoes (or grow 'em yerself) 2. Yer gunna need several cans o' chicken broth, at least a tub of sour cream, shredded cheddar cheese and bacon...

I make mine with bacon, cheddar and broccoli. But i make mine a little different.

THat would probably be pretty good too. Mine was different than his was too and still good.

Blending potatoes huh? Interesting. Chicken broth? I've been eating potato soup all my life and never had it done this way before.

I've had it before but never was around when it was made. Read JJ's post about it which is the link. We kept a few chunks of taters out for adding but possibly could have separated more out as I think we already ate them. Do you just use water with your soup? That would be what I'd normally do. Even when I've made chicken soup from scratch I've always used tap water.

I like broth when it is one dish meal. And in winter when it is cold. Otherwise I prefer clear soups.

Meaning made with water? I would consider a soup made with broth to be clear, so not sure what you mean.

Maybe you can add some starch to thicken it a bit

It ended up thickening quite a bit as it continued to cook, so didn't need that. I was surprised at how much the cheese did thicken it although I probably used a lot more than needed. I just didn't know it would thicken so well until it did.

It was and still is. It was almost too thick the next day. I wish when things thickened they did it sooner as it's very hard to tell when more things need to be added or left alone. Maybe one day I'll learn. It was't too thick, just thicker than I've gotten any other soup.

It was great.
We've been starting church every other week at my daughter's house, for a streaming service from our HQ in Ohio. I think we'll still go because the roads should be fine by then unless more comes in while we sleep.

I used bacon bits and maybe would have used actual bacon if any was still in my freezer, but I finished that a few weeks ago. So you mash the potatoes rather than blend them? That would be another idea and the whole pot could be done at once rather than having to do more times in the blender which was a bit messy.
Do you boil yours in water and save the water for the soup, or drain the water before mashing? Or do you mash in a different bowl and then put them back in the same pot?
