Bruschetta - with an egg

One of my favourite light meals when I’m eating out is bruschetta so when it was offered at an hotel while we were on the house-boat, I ordered it immediately. It came with a poached egg on top which I’d never seen before. The egg was mentioned on the menu. The bit that surprised me was that the egg was cold as in fridge-cold, not just ‘hot-but-left-to-get-cold’ cold but definitely chilled off. I wondered if this was a variation I hadn’t seen before or if it were something new. Perhaps Anna (@LadyDuck) knows what a 'real' bruschetta should consist of. Anyone out there a fan of bruschetta?

A bruschetta with an egg on top is not at all Italian. There are several variations of the classic simple bruschetta (toasted Italian bread brushed with olive oil, rubbed with garlic), but nothing like this. The most common bruschetta is the basic one I described, topped with chopped tomatoes and basil. The one in the photo is a real bruschetta, the bread MUST be warm.

I would not like to eat a cold poached egg, with or without the bruschetta. Much less a fridge cold egg.

if it's chilled boiled egg, i'm okay with it. but somehow chilled poached egg with a runny yolk seems strange.

I love bruschetta, but I would do without the egg on top. I hope it's not a new trend or something. I don't want to see everyone suddenly eating bruschetta with an egg on top because someone said it was trendy.

@JudyEv Well, I guess since everybody is different and have different tastes in things, to someone out there this is an improvement on something they felt needed improving upon. But I'm with you on this, it is perfectly fine as it is, and doesn't need improving at all.

I wouldn't want to see it either. It just spoils something traditional that doesn't need improvement - or improvisation.

I do like a bit of bruschetta but I've never seen it with a poached egg on. I find it strange that the egg was chilled too. Was the yolk still runny?

It was tasty enough but it seemed a bit like having sugar on tomatoes or something like that. Like it wasn't a good match.

Love bruschetta but your post makes me think of something else. I was watching one of my favorite TV chefs and he had a guest chef on with him. I forget the dish they made together. I just remember the guest chef saying to complete the dish it was absolutely necessary to add an egg on top! In the country he comes from everything tastes better with an egg on top of it! I often enhance my leftovers with eggs.

@judyev Bruschetta is sublime, but with an egg on top would be quite unacceptable to me. Best bruschetta I ever had was at Ecco Bomba off the Piazza Navona in Rome. Long way to go for a snack though.

Looks tasty but I would have it without the egg! Grilled bread olive oil garlic and tomato (my favourite) but I know there are so many variations of it too. One I had was with peas and I was not keen on that one!

Huh, a little odd, but I would definitely try one . I love bruschettas and I prefer them simple, toast, chopped tomatoes, olive oil and salt. But I would love to try all kinds of variations as long as they taste good. Still, that egg should be hot, definitely not cold .

I like the simple ones too. When you order you're never too sure what you'll get but I wasn't expecting an egg - well, I suppose actually I was because it was written on the menu.

@JudyEv i have not heard of it this name at all. We have sandwiches that looks like this but it has a different name i cannot remember. Here sandwiches are usually madenof bread,lettuce, roast beef or pork then some secret sauce.

I do love bruschetta also. We have an Italian bakery nearby that makes some nice bruschetta that I often purchase and then put on the grill when we are barbequing. I am not a huge fan of too much balsamic vinegar on it. I haven't ever had it with an egg on it, that must have been interesting.
