Doing some food prep this afternoon

I have some time this afternoon/evening so I've decided to make some meals ahead of time for the upcoming week. That will help out for the nights that I don't get home from the gym until 6:30 pm and then need to get something going for dinner.
I just mixed up the ingredients for broccoli slaw meatballs and am letting everything mingle together for a bit before I shape and bake them. I've made them before and they are surprisingly tasty. They don't contain breadcrumbs and you get some extra veggies thanks to the slaw. . . that you really can't taste when they are baked and then simmered in red sauce. I have them either over whole wheat linguine or zucchini noodles.
When they are finished I'm going to try a new recipe: Instant Pot Chicken Taco Chili. I saw it on Skinnytaste this week and it immediately caught my eye. I'm going to follow the recipe exactly except for adding corn. Everything else fits the Fat Blast Challenge nutrition plan that I've been following. I haven't had chili at all this winter so I'm definitely ready for some. Making it in the Instant Pot takes about half an hour instead of hours and hours on the stove or in a slow cooker. If you do Weight Watchers, a bowl of the chili is ZERO points. That is pretty cool.
My husband has had the broccoli meatballs before and really liked them. He said that the chili sounds delicious. I think he is going to be very happy to see a fridge with lots of yummy homemade food that he likes.
I'll be happy to have less work to get dinner ready after the gym during the week.
Do you meal prep on the weekends?
Instant Pot Chicken Taco Chili is delicious, made with chicken, beans, corn and tomatoes and taco seasoning.

Meal prep is such a great idea. I will have to try both of these recipes because they both sound like things we would enjoy too.

It helps me to have healthy lunches ready for the work week and also for dinner after the gym. That's the 1 thing I hate about my gym. (maybe 2 things) The earliest evening class is at 5 pm and it is 30 minutes away from my house. I keep begging for a 4 pm session. It is tough to make homemade meals from non-processed ingredients when you start at 7 pm unless you want to eat at 8:30-9pm. (which we often do)

I asked the other half about an hour ago what he wanted for dinner, he shrugged and went to take a nap. So I haven't even decided what I'm gonna make yet.

haha I never give my husband a choice. I'll ask him when I'm making the shopping list if there's anything in particular that he wants me to make, but he gets no say in what gets made when. Depends on my gym schedule and motivation. Some nights he gets home from work (due to work or traffic) so late that he doesn't even bother to eat, so I never make a weekly meal plan around him.

@thislittlepennyearns My husband hasn't cooked in years. I am home before him most of the time, though, so that's why. He offered to cook 2 weeks ago but it was just steak and I knew I could easily handle that when I got home from the gym.

@NJChicaa on days that I work, other half does the cooking most of the time. so he gets to cook, but usually I choose what he makes.

I really need to get into meal prepping on the weekends since some days I don't want to cook and then I end up not having actual meals.

@NJChicaa I could probably pick one day a week to do that, I know it is not hard it is just finding the time and energy to get it done!!

Sometimes I meal prep. Sometimes I do not. It does not really matter if it is a weekend or weekday, just whenever it strikes me, and I have food to do it with. Have a big dish of pasta ready for a potluck tomorrow. Bob does not eat pasta, but I held a dish out for me for later on.
