What do you usually make out of leftover noodles, potatoes or rice?

I always have leftover food like noodles, potatoes and rice. I don't know why I always cook more than 2 portions. Usually when I am hungry and then I have to cook, I cook more than my hubby and I can eat. Then the leftover would be eaten the next day.
I don't like to waste food. Whenever I have leftover boiled potatoes, I made them into fried potatoes or potato salad. When I have leftover rice, I mostly make fried rice with veggies and with or without meat. When I have leftover pasta or noodles, I add them into my soup, make a fried noodles or spaghetti. It varies depending on what I have in my fridge.
What do you make out of your leftover? Maybe you can give me a new idea how to prepare the leftover food.
The photo above is a leftover fried noodles (Pancit) made into sandwich. If you ever have a fried noodle from a Chinese take away, you can fill the leftover for making sandwiches. It is delicious and filling to the tummy.

I usually take leftover pasta, rice or potatoes and add some things to them plus make some kind of sauce and make a casserole.

I can relate to that @hereandthere. My siblings and I put the leftover pancit on our white bread and eat it with coke when we were still small children. Thanks. Enjoy your weekend.

If I have left over noodles I still keep them and add green onions and bacon pieces and eat it that way with some cheese too.

i do 'bout the same with 'em here, though 'tis rare i fix any 'f those thingies. the hubs'll not eat lefto'ers, regardless 'f how they'd be repurposed. most oft i make 'new 'n either take such to my momma'n aunt, 'r freeze 't fer myself to be eaten 't a later date.

About the rice I usually made it into fried rice, usually adding it with onions, garlic, corned beef or instant noodles, with oyster sauce and the ginisa flavor mix.

I shouldn't use ginisa but I'm used to it. Sometimes I put vigan longanisa.

Believe it or not, I also do that way but I don't use the ginisa mix because of glutamate in it and I don't like oyster sauce. Fried rice with onions, garlic, spring onions and soy sauce and corned beef is sooooo delicious. Thanks @ilocosboy

It's rare that we have leftovers but I do sometimes make extra portions which I will take with me to work. I just put some in a box and warm it up the next day. Other than that, I'm not sure I can remember the last time we even had left over food! If we had meat, I might have made a curry or a stew with the carcass and/or leftovers.

Just like you i make those left over into new dishes, like yours. For the fried fish , i make them anew into Sarciado. Left over adobo will be added to fried rice or as the "sahog" for veggie dishes.

It's been a while since I had leftovers of potatoes. I've used them in my eggs by cubing them up and scrambling the eggs with them. My mother would make that every so often growing up and it's a favorite way to eat them.
