Perfect weather for some holodnik aka cold beet soup

Just because it's summer doesn't mean you can't eat soup. There are so many cold soups you can make...
I made Holodnik today, which is a cold beet soup. It is a popular soup in Eastern European countries like Belarus, Ukraine, and Russia, and perfect for the hot summer weather.
I made the soup from bunch beets, so the soup has the beets, the leafs and the stems in it, along with water they were boiling in. Other things that went into the soup were diced cucumbers, hard boiled eggs, fresh dill, scallions, buttermilk, and a jar of borscht for more flavor. I added salt and squeezed out some lemon. When it's time to eat I will add some sour cream to the soup bowl.
Along with the soup we will have some salted herring, boiled baby potatoes, and fresh dark bread with butter. It's gonna be a delicious dinner. I can't wait to dive in! It's one of my favorite things to eat this time of year.

Yes, I like cold soup but I have never tried cold beet soup. That sounds delicious. I want to find a recipe and try it.

I sometimes eat hot soup on hot days as well. You don't need to heat it up so it's too hot. Just slightly warm works well. If I ever have cabbage soup in the summer I eat it slightly warm and it tastes great.

I've never had a cold soup; but I don't like beets. I suppose you were raised on it and are used to beet soup and salted herring. Borscht is beet soup too, isn't it?

Borscht is hot beet soup. There are different varieties of it. I love borscht when it's made correctly.

I guess beets are an acquired taste for some. I love beet and goat cheese salad too. And shredded beets with prunes and mayo.

Our daughter-in-law has our son eating cold soups, including beet soup.
I do not like beets.
I tried warmed beet juice, which her mother offered for me to try at Christmas one year, but it must be an acquired taste and she could tell by the look on my face when I sipped it that I hadn't acquired that taste as of yet. But at least I tried it, I did not want to offend her.
I love trying new foods.
