My lunch was an awesome tuna sandwich.

I am alone today and in these situations I don´t want to spend a long time in the kitchen. So I looked into the refrigerator for leftovers. There was a leftover half can of tuna. Leticia used the first half yesterday for a salad and placed the other half in a glass Tupperware. I also had some crushed garlic in olive oil and iceberg lettuce. So I made a tuna mayo with a bit of garlic. Most of it was saved for tomorrow as I will have both of my girls for dinner. But I scraped the mayo from the blender and added thinly cut lettuce. I heated 2 toasts and made a delicious sandwich. I wish I could have taught Coral ( @TheSojourner ) how to make mayonnaise. Now I mostly make it with a blender. What did you have for lunch?

I am currently eating pizza rolls, while I wait for the kids to get off the bus and the boyfriend to come home from work. I have been on the phone with all kinds of different people this morning trying to get stuff straightened out.

I love tuna! For a sandwich, I usually have mayo, mustard, garlic powder, minced onions, salt/pepper, and parsley in it. I've heard homemade mayo is outstanding! I haven't had lunch yet . . . maybe I'll dig in the fridge for some leftovers!

I haven't had breakfast yet so I'm not sure what I'll be having. Tuna does sound good but all I have is sardines, I guess I'll have that for breakfast.
