What's for Dinner Tonight? It's Gumbo Weather!!

With this super cold weather we are going to throw in the towel and make a big pot of gumbo for dinner tonight.
I have a chicken in the oven and will debone it and also cook some sausage to throw in for a chicken and sausage gumbo. This will hit the spot and help keep us warm this evening.
The weather forecast for us goes from one drastic low of 22 to 34. Well it's not that drastic but a big difference. I am hoping for the 34 but not counting any chickens until they hatch or the fat lady sings, which will come first?
How is the weather in your neck of the woods? I hope you have a clearer projecton that we have here. I'm not going to turn the local news on because my mom will freak out if she hears 22 degrees and the in the teems with wind chill and that will do it. Nope, not gonna happen.

I've been hearing the news stories about the fires in Australia but I thought they were all on the eastern side of the country around Sydney. Are you happening in your area as well?

@kareng @moffittjc The fires are all on the eastern side of the country at the moment but there is always that danger in the backs of our minds. Someone was seen lighting fires not too far from where we are so you just never know.

@kareng I'm afraid our 60s will be in April. Now they're saying 48 for Monday. Still below normal for this time of year.

There is a restaurant here that serves gumbo and other Creole dishes. But I haven't tried it yet because I'm afraid it is too spicy for me.

don't blame ya fer not wishin' yer sweet momma to hear 'f the weather, hon. that gumbo sure sounds good! some homemade chicken bone broth 'd hit the spot, too. i need to put a whole chicken'n my list, but might wait a bit coz i'll be gettin' the turkey schtuff here soon 'nough. great nutrition, versatile, freezes well - bonus!

@crazyhorseladycx We will be going to my aunt and first cousin's for Thanksgiving dinner on Wednesday night. They live east of Baton Rouge. And then on Thanksgiving Day we are going to my oldest daughter's house in Lafayette. She is cooking but they are also packing up to move so will have boxes everywhere. It is going to be rough with all the travel but I miss my baby Brinley! We will get to see all the boys too. My mom has never met her new hubby or Brinley so that will be a treasure for her as well.

@kareng i hear ya! wish i 'twas roastin' the bird this year, but alas my sweet momma 'tis takin' such a task. dunno how much time i'll 've with the hubs surgery 'n 'ftercare.

I have to say the sun did come out today but we topped out at 52. Much better than 32, but the temperature is dropping now. I'm just waiting now to see who has the right forecast. I'm leaning with the first one with 22 degree low. They were closer on the mark last night than the others.

Here it's unseasonably cold, too. Oh well, at least we'll be used to it
