I am really sleepy and I am in my pajamas, but I cannot go to bed yet. I am baking bacon. Yes, that is what I said.
We do not buy bacon often but when we get a good buy on it, we will buy a large package. I put it on a roaster pan and bake it. I bake the whole package in one evening. I then refrigerate it.
We pull out a slice or two and put it in a skillet with eggs, or microwave it. I will have it with a baked potato for my lunch tomorrow.
I fill the roaster plan three times and bake until it is crisp. I have finished one pan, one is in the oven now, and I will have to do it one more time.
Bob has made himself a peanut butter and bacon sandwich. He likes it that way.
This way I only deal with the grease one time.

Yes, cook once, clean once, but get double the good. Also heat the oven once.

Do you save the grease or throw it out? I throw it out now, but we used to save it in a jar in the fridge.

I have saved it. I think it had been a couple of years since I had purchased any bacon to cook. I had bought already cooked or bacon bits. Certain things just taste extra special with bacon grease, or as this one site called it "bacon butter".

@GardenGerty Bacon butter, I like that. Yes, I like cooking my eggs in the grease of bacon or sausage, though I know it isn't the healthiest.

My blood pressure does not seem to be high. We will mainly use the bacon as a garnish of our foods and not as a main dish.

I think I learned this from a website. It works well for me. No frying it and spattering grease. I have microwaved it.

I read about it online. It is fast and I have a big plastic container I store it in. I baked about three pounds total.

I’ve baked bacon before, it’s far less greasy that way, but Peanut Butter and bacon doesn’t sound appealing...
