Lunch was comfort food for us

For lunch I made what people around here call "Shepherd's Pie" but technically, shepherd's pie is supposed to be made with lamb. You could call what I made a ground beef casserole and be accurate.
It all started because I had some left over mashed potatoes from last night.
I also had some ground beef that I got for a good price.
Match made in heaven for me. I fried up the ground beef with about 1/4 onion. Seasoned it with salt and pepper and other spices. Sprinkled on some Worcestershire sauce. Stirred in a drained can of mixed veggies. Put in a baking dish with a can of mushroom soup. Spread the leftover mashed potatoes over the top, sprinkled with shredded pizza cheese. Baked at 350 for about a half hour.
It was so good. It was a different meal than we have been eating so it made a good change of pace.
We will finish it off tonight.

When I worked adult residential we had similar casseroles as often as twice a week. Pound of ground meat (I have never used lamb) frozen or canned veggies, sauce or soup and topped with mashed potatoes, or tater tots, or even a bisquik batter.

i 'lways figure 'tis my kitchen, can call't what i wish, lol. sounds good 'n no doubt a nice change 'f pace from turkey 'n ham. i wish the hubs'd eat lefto'ers. he gets more picky by the day. dunno how he 'xpects to heal proper with not eatin'.

I am very fortunate that with the exception of pasta, hubby will eat just about anything, and if he liked it once he is sure to like it twice. Can you make some drinks with protein powder to help your hubby?

@GardenGerty yes ma'am, yer most fortunate fer that. the hubs refuses to drink 'em. i've given'p. 've gotten the point i no longer care'n that aint a good thingy.

The first time I had shepherd's pie, I was 17 and in the hospital... I thought they must have made it with real shepherds or their socks or something, because it tasted awful.

Hospital food is so flavorless, probably because it is supposed to be "healthy". A little seasoning sure improves things.

@BarBaraPrz When hubby was in the VA this year he had some decent food, and some not so much. But they take the salt out of everything.

I agree, just technicalities. Hubs says in school they sometimes used thinly sliced potatoes for crust.

I have always made it with ground beef or turkey. Not too many places to buy lamb around here as it is not real popular.

I do not usually make mashed potatoes as they are not good for my blood sugar. Tater tots also work well in this type of casserole. I am needing to do stuff with ham for a few days.

I have always used ground beef or ground turkey. When I look up the recipe though it always calls for lamb. Leftover roast beef would be yummy. Are you working a lot in the schools this year?

Sounds so delicious! I'm having leftover linguine with meat sauce this evening with some garlic bread. Debating whether to cook up some frozen veggies too.

It makes a quick and economical meal. We did not eat it growing up, but it was on the menu a lot for me to make at one of my residential jobs.
