Quick, easy, healthy

My go to fast food is not a sandwich. Nope, it is a microwaved potato in its skin. I started our plates with those. I steamed some broccoli as well. For protein I opened a small can of pink salmon. We also had some pickled beets and chopped onions for garnish. Colorful food. To be honest, we were not 100% healthy as we had sour cream, butter and I even had some mayo. It was still more veggies than I have been eating lately.

Good eats Heather. I occasionally come up with quick, easy, healthy brainwaves but not too often and this one of yours sounds so good. Lately though, I'd probably stop at the potato with sour cream as I don't have veggies on hand. How long to do the potato?

Usually three minutes for a decent sized potato. I have frozen veggies on hand and I rely on them, and my microwave.

@GardenGerty I also have a microwave. Yours must be very powerful to do a potato so quickly. I also have a dry frier that I use a lot. Frozen veggies is definitely the way to go.

That sounds like a baked tater with butter n sour cream. I don't see how that could be unhealthy if you don't eat it everyday.

To me it's healthy food @GardenGerty now if you were eating a lot of processed foods then that would be unhealthy.

Sounds healthy. I also like brocolli with salmon, it's a great combination. Usually I am baking salmon marinated in baking paper pouches and it's super tasty.

I have not used the pouches but I have baked marinated salmon. Yummy.

@GardenGerty The pouches are very convenient, you can fold the salmon piecies in baking paper with the marinade inside and a lemon slice on top, and it is baked in the marinade without being afraid of burning the salmon. I found this recipe online and I am using it since then.
