Although what I fixed tonight is called Zuppa Toscana, and it is a soup that Olive Garden serves here in the US, I know it is not the only Tuscan Soup to be found. I am sure there are many delicious soups in Tuscany. I did fix this recipe, though. It is a hearty meat and potato soup. The meat is Italian sausage--I used sweet, not hot. It has onion, garlic and I added a few red pepper flakes. Potatoes, of course. When the potatoes are done, add chopped spinach, kale or other greens and heavy cream plus a little flour. I had everything on hand except bacon. You are supposed to garnish it with bacon bits. I did have some bacon fat on hand to cook the onions in to start, though. What did you eat tonight?

I do not have much success with egg rolls at home. I wish I did as that would stop us from going out for Asian food.

@AmbiePam I have never made them from scratch, but I am not happy with how frozen ones turn out for me.

You are right, there are many delicious soup in Tuscany, not one "Zuppa Toscana". The most famous are called the Ribollita , the Frantoiana, l'Acquacotta and la Farinata, NONE of them has sausage or ham or bacon.

I knew you would be here to tell us more. Many things in the US are non authentic, but tasty. I do not fool myself into thinking I am eating Italian food.

@GardenGerty I visited a few "Olive Garden" in different stated and I never ate anything that tasted "Tuscan". Their food is sometimes good, but absolutely not authentic. Most dishes they propose do not even exist in Italy (like the Chicken Alfredo).
