Showcasing my Dinner Party

That’s my brother and sister-in-law in the photo. It was the best photo I had showing the dinner I made last night. Our friend, who has cancer, and her husband were also there. My friend is allergic to garlic and onions, which limits my cooking for her. She loves Shake ‘N Bake pork chops, so that’s what I made. She dislikes mashed potatoes, so I made a special mashed/baked potato. I served it with fried asparagus, and grilled ciabatta bread, with no garlic on her slice. We also had a salad without onions. Everyone, including my gourmet cook of a brother loved the dinner and had a wonderful time! It was a lot of work and quite scary. We lost power twice yesterday! Tonight we are all going out to dinner with another couple - my yoga instructor and friend.

The potato looks good almost like a cupcake. Did you use a torch on the top?

No, I broiled it just before serving. It was heating in the oven anyway.

Your dinner looks and sounds delicious. Pork chops??? Am I missing something there? I thought you couldn't eat pork. The picture is great! They look so happy and I'm glad everything went well except for the power outages.

It was wonderful. We had shrimp in our salads. No diet restrictions for us. Thanks! The power outages almost made me want to cancel the dinner, but it worked out well.

@DianneN We cannot go to Italy right now, the border to Italy is now closed and it is better that it stays closed until the situation does not improve.

It is tough to make food when there are food restrictions. But glad you were able to do it and it was enjoyed by all.

@DianneN Your very welcome. I would think it would be also. My boyfriend and I have a friend she is a vegetarian and we went to the bar and ordered snacks she ordered some type of breadsticks that had meat in them and she did not know it until one of our other friends said something then she ran for the bathroom to get rid of them.

@DianneN That must be hard to cook something different for one or two people and then the rest can eat what you make. That is not fun losing power. How is your friend that has cancer doing?

True, but it was easier than cooking for a vegetarian or vegan. She’s hanging in. Some things show improvement, but although some tumors are shrinking, some are growing.
