A delicious rice omelet for lunch.

I had a bit of rice. And you know that I am not throwing away anything. So I out out one egg, cut up a green bit of the bunch onions I have in water in the kitchen (cut them), the rice and a bit of grated cheese. i don´t have the other cheese anymore. I made the most delicious omelet you can imagine! Latter on I will make me a green salad. The lettuce is washed and dried. So it will be a minute before I add something else. Avocados? Hearths of palm? For the moment I will take a map. I watered my plants. Some of the arugula are showing their faces. Incredible! I planted them only 2 or 3 days ago. See you, friends

I add just about anything to eggs and use the leftovers. We call it tortillas in my country.

I am not a fan of rice or omelettes. But if I were, I would certainly taste this.

I make omelets with just about anything. It can be just eggs, with cheese or cheese and chives or, when I have leftover, with just about everything at hand.

I'm not throwing anything away either. I have a few bananas that are over-ripe so I'm going to make banana bread.

It would be a shame to throw away things in this moment. For me it is nothing new as I have made budgeting a way of life.

I either use the green part of the bunch onion or scallions. Now scallions are not in their best moment at my home so it is bunch onions.

I never tried 'rice in egg' but I have tried 'rice with egg'.Do they taste similar? I love rice with omelette.

I beat the raw eggs, add cooked rice, dices chives or a bit of bunch onions and cook as omelet. Cheese is good there too.

I only add a little bit of rice. I don´t like thick tortillas but thin ones with more eggs.

I think that the only way you can mess it up is if you don´t use enough eggs in relation to the other ingredients. II even make omelets with leftover pasta. But I add only a little amount of pasta.
