Pasta Salad with Tomatoes Dinner

Decided on another light dinner. A pasta salad with tomatoes and artichokes. A few crackers on the side. Has been a hot and humid day here filled with sunshine. A lot going on here for now but hopefully things will get settled soon. Will catch up with everyone as time allows. Have a good weekend. Any plans or special meals for anyone?

I have seen artichokes in the supermarket but I have yet to taste it.

I had spinach & cheese ravioli in chicken broth with lots of other veggies. It too was very good.

I used olive oil. It was great with the tomatoes and artichokes, and sinks into the pasta crevices.

@FourWalls It is also good with vinegar and oil. A light dressing is what I like with pasta.

what a wonderful dinner, we do that in our house (we call it salad night). it is probably the only night the twins willingly eat a vegetable!

Never tasted Artichokes. It's not grown in my country nor anything made from it . But looks interesting. How does it taste. Is it easy to cook .

That sounds like something I would eat. I make pasta salad with different veggies in it a lot in the summer. It is cheap, cool, healthy.

Once it gets again, I like to make pasta, tuna salad. Not sure why, but I don't like tomatoes with cold pasta dishes
