Zucchini From My Neighbor

Was outside just now in the screen room. Taking a break. My neighbor came to the fence and asked if I liked zucchini. I said well, I have only had it fried in a restaurant before. She said you could make bread, fritters, salad, and all kinds of stuff. She brought me two that are about 16 inches long. Could not believe the size. So now I search for recipes. Any ideas anyone?

I like it sauteed with a little bit of onion, salt and pepper. Zucchini bread is supposed to be good or you can eat it raw in a salad.

@porwest With zucchini? I don't remember doing that. The only time I added onion was to mushrooms. Zucchini isn't even one of my favorites.

Some people make noodles out of it, and serve it as spaghetti. French Fried zuchinni is also good.

I have seen those "noodle" maker thingamabobs. Never used one. And never tried it.

I often slice zucchini into my stir fry and rice dishes. I am sad today cause again I think my zucchini plant is going to die. Darned hard shelled bugs. I wish I were one of those folks who grow zucchini by the buckets.

@CarolDM Its my third year of trying to grow zucchini. I have two tiny zucchini now but the leaves are yellowing so I bet those babies won't survive and neither will the plant.

My favorite is to cut it up in chunks, put it in a pan with olive oil, add tomatoes, fresh, onions, and mushrooms. Add garlic and seasonings. Oh my, my mouth is watering. I wish I had some zucchini for lunch.

I love zucchini. I wash and slice it. Then put in a bowl, sprinkle salt and pepper and add a bit olive oil in them. Mix them well. Arrange the slices on the baking tray and bake the zucchini in the oven until golden brown.
