I´m roasting eggplants. / myLot

I have some tortillas and I thought I´d made a couple of tacos for dinner. I have cheese and I put eggplants, onions and sweet pepper at the oven. When it is done I´ll melt the cheese and add the veggies. What will you have for dinner?

I roast them in plenty of olive oil. If there is some left, I eat it with bread.

That sounds really good. I just posted about my dinner. I made a veggie stew in my slow cooker with potatoes, tomatoes, onions, cabbage, and a few frozen meatballs, It was very good and I have food for tomorrow.
