Yesterday, my brother picked up a Duncan Hines cake mix for me to make for dessert. It was a lemon cake as he is not very fond of chocolate. My eyes quickly went to the top of the box and to my dismay, it said Signature at the top. But, he remembered and bought two cake mixes. Why, you may ask? Well, last year he bought a Duncan Hines Signature cake mix as he wanted to make a cake. Once it was in the cake pans, he called me to the kitchen and asked if it looked ok. The pans weren't very full but I thought maybe it would rise more while baking. Well, when the cake was done, I heard such a commotion and a few choice words coming from the kitchen. When I went to see what was going on, I saw a cake that was between 1-2 inches high, two layers and fully iced. It reminded me of those Easy Bake oven cakes. I busted out laughing, I couldn't help it. By looking online, we found out that the Signature cake had less ounces than a regular cake mix. 3 whole ounces less. The reason being, changing the size is less noticeable than raising the price. Well, we proved them wrong. So, if you have a recipe that calls for a cake mix, make sure you get an 18 ounce box and not a 15 ounce box or it could mess up your dessert. From what I understand, there are three companies that have the 15 ounce boxes. We just know of Duncan Hines and the key with it is the word Signature. **Photo is from Pixabay**

I rarely purchase cake mixes (it's been years) so I probably would have just wondered what I had done wrong. I tend to make everything from scratch....healthier and usually much more economical...also usually not that difficult or time consuming.

I have bought those type in the past but didn't notice that big of a difference. I usually bake in a one layer rectangular pan. But thanks!

That is important information to have. I usually only bake a cake from a box once a year, for our son's birthday. We usually celebrate his and his wife's birthdays, which are a week apart, with her family. A nice big thick cake is in order for that crowd. Otherwise we are not cake lovers here, and I may bake 1 or 2 small cakes a year. I make them from scratch because I need something small-smaller then the signature cake mix.

I buy the Duncan Hines pineapple cake mix for my pineapple cake, don't know if it's the signature or not never paid any attention to it. I need to check next time I'll make it which will probably be at Christmas, thanks for the heads up though.

Wow, I did not know that. I mostly use cake mix as an ingredient, like in a dump cake, so I would not have noticed until I decided to make a layer cake.

I usually buy cake mixes when they're on sale but have never looked to see if they were 18 or 15 oz boxes. Now I'm going to have to check what I have in the pantry and not be surprised if they're only 15. Certainly wouldn't want my cake to be smaller than expected.
