Tried cooking some southern dishes

How’s it going? Tuesday here in my world and I am just jumping on the treadmill before I shower and get ready for a 6pm class up in the boondocks/about 45 mins away from the city I live in. I am taking this class and I feel TOTALLY like the underdog. And I am not just having low self esteem. I am seriously probably the worst in the class. Haha! Ugh! I am going to keep trying and holding on - but dang!
Anyway-wanted to share the spread I made the other day for my roomies.
1.) Slow Cooker Collard Greens (vegetable broth, onions, diced tomatoes, spices like cayenne) - delicious but made the house stink pretty bad!
2.) Vegetarian Gumbo - without meat or mushrooms. First time making a “roux” which takes a ridiculous amount of time (and I don’t know if it was worth it), and first time cooking and eating okra. Also liquid smoke is a thing, first time using that! Yum! Probably very different from the meaty Gumbo which is popular.
3.) Quick grits - I was in a rush and made some Quaker grits. And they were delicious!
On the side I made us a bourbon drink (found online-Grown Up Jack & Coke- basically bourbon, lime, club soda, molasses. Tasty but strong)!)
Thought it was appropriate as next Monday me and my sister are flying out to Virginia, North Carolina and South Carolina for a few days for a flurried quick vacation.

I work in a kitchen so cook every day...new and interesting though not so much

What kind of class is it that you are taking?
The recipes don't sound very appealing to me especially grits

I can't say that I have, but we did get some beef tips and a good hamburger. So we're going to have ourselves a couple of treats this week.

Same old for me. Stay safe on those planes. I hear it is not a good time to be out and about.
