It is the day before Thanksgiving. I do not want to cook a whole lot today, because I will be cooking a whole lot tomorrow. After my doctor's appointment I needed to make a quick and filling lunch. I cut one nice sized sweet potato, two small russet potatoes, 1 yellow onion and two small apples into chunks. Put them on a cookie sheet and drizzled them with olive oil. I put them in a hot oven for about a half hour, then added chopped smoked sausage/Polska Kielbasa for another half hour. I put a garlicky spread on mine. Hubby put grainy brown mustard on his. It is a simple and delicious meal. There is enough for tonight, but I will also cook some baked beans for the side. I will use the grainy brown mustard as well. Cook once, eat twice. Yummy

@GardenGerty my son used to eat potato everyday. He didn't know how to eat rice (Indonesian eat rice everyday, at least once or twice a day). Now he knows how to eat rice, but potato is his favorite.

I was only going to roast a chicken. Hubby wanted turkey and ham. I think I will have enough food to take us to Christmas.

@GardenGerty I made Swarma a couple of days ago and we still have some of it in the fridge. We both love smoked turkey so that's what I cooked for Thanksgiving. (I usually end up freezing some of the turkey and eat it a month or so down the road.)

It is. I always have onions and potatoes on hand, usually apples too. It does not take a lot of planning to do it.
