Good afternoon from this side of the planet It's 3:40 PM here and I have been awake since 5 in the morning. And I have done a lot since morning. Happy to see that I have striked most of the things on my to do list That makes me happy. It has been a warm and sunny day. An ideal one for laundry. I washed two of my blankets and one big comforter and they all are happy, fresh and crisp after a good sun exposure. After lunch, I helped my younger one with one of her Political science lessons and it was good revisiting lesson on India's foreign policy. Teaching my daughters and students help me a lot to refresh and update my information and understanding Now the major work that's left is making a special dessert carrot halwa ( Indian sweet dish made from carrots, sugar, dry fruits and condensed milk). You can see those red carrots peeled and getting washed in sink there in picture. I will grate it before going for nap. My home made condensed milk is ready. So it will be quick to make it after my nap. Now I will just quickly tidy up my kitchen and wash few dishes left from lunch. Then I deserve a power nap for 30 minutes. Catch you later. One big accomplishment of today has been clearing all old notifications here. Now we are starting fresh

I put some ghee( clarified butter) in pan. Then add grated carrots to it. Cover it and cook for a while. Then add sugar and cover and let the carrot cook well on low flame and covered lid. We stir it every now and then to stop it from sticking to bottom. When carrot is well cooked, I open the lid. Let the excessive water dry and then add condensed milk and nuts and raisins to it. We stir it open for some time to get it a bit dry...it should be moist but not runny.

You worked too long at a stretch. Deserve a rest. Your carrots look very fresh and of good quality. Gajar ka Halwa is one of my favourite but we hardly do it at home. Sometimes when my daughter comes here she does it.

That's my regular working time on weekdays. 5 AM to 4 PM. And then nap of 20_40 minutes and then till 10 in night when I hit my pillow. In between I do come here to give my feet and mind some rest. It's yummy but a time taking one. I make it only during this season when red carrots are there in market. This is the third time I am making it and it stays for few days in fridge. My daughters love it. Now the next one will be on 16 February on Basant Panchami day to offer as prasad to Goddess Saraswati. That would be last one for the season. I hope I get these carrots by that time.

That's a healthy choice you made. I have made it few times in this season. I only make it when these red carrots are there. But I just had two spoons when I made it first time around Christmas. I will have another two spoons tomorrow with my breakfast. My occasional sweets are with breakfast so that I can burn it in day time.

I have still not tasted it. But my daughters are relishing. I might have two spoons tomorrow with my breakfast. I prefer to have my occasional sweets in morning meal so that I have a long day to burn it and it doesn't interfere with my sugar levels. I am happy that I have those notifications back in huge 3 digit number and I am handling them right now

@arunima25 I think it doesn't disturb sugar. we are using it in other way than what is wrong in drinking its Juice. I like mix juice of carrot, red beat route and kinoo.

I have made it few times since December and each time I make enough for a couple of days. My daughters love it and they are having it everyday since DecemberI just tasted it once on Christmas. I am going to have two spoons tomorrow with my breakfast. I have my occasional sweets in morning meal so that I can burn it in the day time with my activities and my sugar doesn't shoot up. I have made kheer earlier but my family prefers halwa over kheer. Never tried gajar pak. I should check the recipe of it online. I avoid juices. Doesn't juice disturb your sugars??
