What To Do With All This Ground Beef?

There has been some great sales with ground beef recently (at least a good deal in the stores here).
We got 5 pounds today for less than $9! The other day we got almost 3 pounds for about the same price (wasn't as good, but still not bad). So that's around 8 pounds of ground beef.
Now the question is what to make with it that is low carb and will fit my "points"?
Of course, we can make bun-less burgers, tacos, sloppy joes, enchiladas. I am still looking up points for some of the recipes.
But what other things are there to make with ground beef? What would you make, I guess I am asking. I may be able to make them, or alter them to fit my new plan.

@MommyOfEli2013 Spaghetti, lasagna, shepherd's pie, chili, dirty rice, Manwich loaded potatoes, meatballs, porcupine meat balls, stuffed cabbage rolls, stuffed peppers, stuffed portabella mushrooms (the big ones), just to name a few.

@porwest Well if I can find a good noodle substitute I could do spaghetti and lasagna. I do have a good chili recipe, and a sloppy joe recipe I use. Porcupine meatballs? Never heard of that. The stuffed things wouldn't be on my list but I am sure they are good

Well curious what those are...lots of times there's ways to make a recipe low carb just by changing up some things

personally i like to make tortialla wraps. Get the gluten-free tortialls - cut a line from the middle to one end. Then put the burger in one quadrant. Pickles/tomatoes or onions whatever you like in the other three. Then you fold one cut quadrent and keep soldering.
Makes a fun burger wrap low carb!

I don't know if the ones I use are gluten free, but they are low carb. I think I've seen those kinf of wraps going around the internet with different foods. May have to give it a try!

I do have a recipe for meatloaf, and could make meatballs and figured on burgers. Also figured on sloppy joe (tacos) and chili (no beans).

Look up the recipe for deep-dish pizza casserole. It calls for a processed dinner, but if you make it from scratch, I think you can cut the carbs down as it does call for pasta. I made this a couple of days ago and finished the leftovers yesterday. It's very good, especially if you skip the processed pasta dinner and make it from scratch.

Well I could just do without the pasta, or use an alternative if I can find one. A pizza casserole sounds good though

I just cook it as is, (season to taste) and add my favorite sides. I know you have restrictions on what you can do, but my husband and I tend to do mashed patatos and some canned veggie (usually corn) as sides. You can always make them into patties and do that, too. or meatloaf.... eggs are safe for you, aren't they?

Well that is fine, once in a while....but I wouldn't want to eat it that way for all of the 8 pounds lol. Yes, eggs are fine.

Meat loaf, meat sauce and meat balls for spaghetti (using something other than high-carb noodles...too bad you don't eat veggies)...

Well I do have some "hearts of palm" noodles in angel hair and lasagna style that I need to try. If they are good, then I can have a noodle alternative (although I still have a recipe or two to try that are home-made).

I haven't had a sloppy joe in the longest time. They are really a great idea for ground beef. I also make chili for tacos or to put over chips. You could store a lot of chili with 8 lbs of beef
