Yummy banana nut bread

Yesterday I had two bananas that were still a little green, but I really, REALLY, wanted to bake some banana bread. What did I do, you ask? Well, of course I googled how to quickly ripen bananas. Google told me to bake them in the oven for a few minutes until the skins were black. I did and they were perfectly over ripe inside. I have a really delicious recipe for banana nut bread, but now that I need to use gluten free flour instead of wheat flour, it took some figuring to try to get the measurements right. It actually turned out pretty good. It was a little dry, but after it was baked, I poured a little simple syrup (equal parts white sugar and water heated until melted) over it. Moistened it up lovely. I probably needed more bananas in it, but I added some chopped pecans, a little orange juice, and some cinnamon. Very tasty. Now if I can just keep from eating the whole loaf. My husband's not as crazy about it as I am. I'll probably freeze half of it. Have you baked anything yummy recently? Or plan to? PS I have no idea what those flowers are. My husband transplanted them from a neighbor's house years ago.

@1creekgirl My neighbor had orange lilies and called them ditch lilies. But there are many varieties. They could also be Asiatic lilies. Here were my neighbor's.

@CarolDM is right, the flowers are lilies, very pretty. About a month or so ago I made some banana nut bread too. It was a while since I last made any and it was delicious. Have a blessed evening.

You really do like baking Madam. Here in the Philippines we got bananas all year round. Banana Bread is very famous nowadays here. I love banana bread. I always order banana friend from a friend of mine.

When I saw the picture I wondered about the name of those beautiful flowers. So you are wondering too? Had we lived a little closer I could have given you a few ripe bananas as I have quite a few at this time. I eat a few bananas every day. Yesterday I had one meal of only bananas and I ate 9 of them.

Oh my, did that many bananas at one time hurt your stomach? I wish we had a banana tree, but I don't think it would thrive here.

I love banana bread but haven't made one recently. I'm trying to lose a few pounds so I've resisted baking . That's a really good tip about ripening the bananas

I had some bananas that I was waiting to ripen for banana bread. By the time they were ready I didn't feel like making it any longer. I put them in the freezer so I'll have them for the next time I want some.

I had heard about ripening them overnight in a paper bag, but putting them in the oven is much faster.

@1creekgirl It sounds like you were very creative in making it. Too bad your husband did not like it but good idea to freeze half to have another time. I am glad it turned out to your liking. That is more for you since he does not like it.

I haven't baked anything recently, but I like making raspberry and blueberry muffins, and at Christmas I made a Chocolate Aduki cake! All of them were done without any dairy, eggs or sugar!

@1creekgirl It's a cake made with Aduki beans. When baked in a cake they taste a bit chocolatey. With added cocoa powder it tastes even more chocolatey!

I’m so glad to know I’m not the only one who doesn’t know all about flowers! I have a love- hate thing going with all plants. I love them, they hate me. My late husband loved house plants and they him. When we got married, he had a table full of all kinds of plants. I steered clear of them, announcing to them that they belonged to Bill, not me. They only lasted about six months, one or two at a time they just wilted away. He planted lilies like yours in our yard twenty five years ago and they are still here, a little reminder of him that God blessed me with.

We have a lot in common. I was told no one can kill a snake plant. I did. My husband is the gardener around here...I love flowers, too, but just can't keep them living.
