Eggplant for lunch

I fried up some eggplant yesterday. I added some garlic, scallion, parsley, and sesame oil to it. Thought it would turn out great. It didn't turn out the way I'd hoped it would. It's not bad but not very flavorful. Oh, well. I will not let it go to waste though. Whatever was left over from last night's dinner I will have for lunch now.

It didn't come out as well as I thought it would. I added some olive oil to it now and it became a little better.

@lovebuglena Don't worry, it will come out right next time. LOL. Actually, I usually cook it like... I boiled it first and peel the skin and mixed with egg, and it's like an omelette...

@asianlady Usually the skin is tender when I fry it but this time it was not. I had to not eat the skin.

It has been so long since I had eggplant..I love it and thanks for the idea since I do not eat meat now.

I love eggplant. Sometimes I get Chinese eggplant and fry it in a skillet and add sesame oil towards the end and it tastes really good. They do take a lot of oil though when you cook it.

I added some olive oil to it and it tasted better. I wonder why I wasn't able to taste the sesame oil. It seemed like I added enough of it when I was cooking.

At least it's edible, my culinary fails I end up eating anyway usually. Very few I would describe as inedible.

What my wife usually did to cook an eggplants. She grilled and peeled off its skin. Then she dipped them in a scrambled eggs and fried them.
