I discovered my dinner in the freezer.

Once in a while I cook. And I cook well.
My husband used to tell me that I was a very good cook "when I cooked". Time and being a widow changed things. I had to cook every day.
Then I got ill and could not do much but Leticia helped me.
Now, when I am in the mood and have the ingredients, I do something delicious. And sometimes they stay hidden in the freezer for too long and I don´t like them any longer.
But today, after lunch (broccoli and cauliflower again) I discovered that I had one person batches of lasagne. And I took one out to thaw.
I just finished eating it. Delicious! I heated it with a bit of water to moisten it and brought cheese to grate on top of it. But I did not need much. The inside was full of melted cheese between the layers of the homemade tomato paste.
Now I´m in bed with my tummy happy and full. I´ll check for a movie and if I´m not much interested, I´ll mylot some more.

@LadyDuck We write it "lasaña" in Spanish. I always thought tha in English it was lasagne

@marguicha They write lasagna because this is how the world sounds pronounced in Italian. But lasagne is the correct world in Italian.

Lasagna is one of my favorite foods! I love it with ground beef and lots of mozzarella/parmesan cheese.

Lasagna sounds heavenly. I used to make a deconstructed lasagna with a ton of different cheeses.

I love to prepare a big batch of potato soup in the Crock-Pot and then place the leftovers in the freezer. When I do not feel like cooking, I get the soup out of the freezer. My roommates are not really into leftovers, so I have alot for myself.
I like to have mozzarella and cottage cheese in my lasagna. How about you?

I usually add mozzarella and the some Parmesan on top.
