In my small oven I have pared eggplants, red sweet pepper and half cut onions. I poured a lot of olive oil over it, I love that eggplant and olive oil over bread.
I am feeling much better from my shot and my appetite is back.
I just received a call from my aunt who invited me for lunch on Thrursday. I bought a wonderful cholocate cake similar to the last one and will take one fourth of it to her house for dessert.
What are you having for dinner?

I don't really like eggplant but I have to say it looks and sounds good. I would try it again if it were made this way.
I am having a use up everything dinner tonight. I have leftover pork loin and bbq beef ribs, some asparagus that should have been eaten two days ago, leftover fried potatoes with onions and cheese, cucumber chips in pepper and vinegar and the last 4 dinner rolls. I should use that tomato too. Maybe a salad tonight with everything else.

@Vikingswest1 Do it. Eggplants used to be bitter years ago. But now we have transgenic. This is one of the things that are better transgenic.

I never could make a good meatloaf. It was always dry. But Leticia did it perfectly well.
