Easy Fried Potato Cakes

Sharing an easy meal for anytime of the day. Make fried potato cakes with leftover mashed potatoes.
Two cups of mashed potatoes. Add a little over a 1/4 cup flour, 1 egg, salt and pepper. Heat a pan with canola (or olive) oil on medium heat. Brown on both sides. Drain on a paper towel and sprinkle with salt. Easy and quick!
You can also add ingredients if you want. Any kind of cheese goes well with potatoes. Some prefer minced onions. Bacon or ham are good added in the batter as well. The options are endless.
Have this for a side with your meal, or as your meal, which is what my dinner will be. Photo is mine.
These are delicious with sour cream on the side. Ketchup is always another choice with potatoes.

My grandmother used to make a recipe similar to yours and added a can of tuna. She called them fish cakes and they were so good. Gee I haven't made them in ages but now I want to!
Your potatoe cakes are a great idea for leftover mashed potatoes for sure

@CarolDM Thank you so so much for sharing this! I've heard of potato cakes but uncertain if I've had one. I feel like I have when I was little. Otherwise hash browns is as close as I could get to a potato cake. They look so yummy Carol, thank you for sharing this!

I tried to make these years ago and it didn't work. It's no wonder, because I didn't use an egg! Thanks, for clarifying this, I love these very much! Especially with catsup:)

I don't think I have ever had potato cakes, but sounds good. Maybe one day that I allow carbs I will try it.

I do this all the time with leftover mashed potatoes. However, I skip the flour...it makes them a little more likely to fall apart, but they are just as tasty.
