Lamb shanks dinner

My mom got us six halal lamb shanks earlier in the week. I had no idea what I was gonna do with them but then decided to cook them in my Staub Coq au Vin Dutch Oven.
I cooked them for about 2 hours and 40 minutes with carrots, onions, celery, and a 750ml bottle of Cabernet Sauvignon wine. I never cooked meat with wine before. The lamb shanks came out pretty good, the meat falling of the bone. For the side I made rice noodles.
It was a really delicious dinner. We actually had enough for Thursday and Friday dinners. Could've left two lamb shanks for dinner #3 but didn't want to do that. We go out to eat Saturday, so we'd only be eating them today. Didn't wanna keep them that long, though they'd probably still be good to eat.

I don’t think I’d put them in soup. They are too good to use for soup.

@porwest My MIL used to make lamb shanks. She'd cook them until the meat fell off the bone. It was good then; but I can't bring myself to eating a baby lamb anymore.

Lamb has always been kinda meh and inconsistent to me. I can never cook it right. And when you order it, sometimes it's okay and other times it is not. Can't figure it out. There's just something about lamb that I just can't go crazy for it.
Now, in a gyro it's delicious. But of course, it's very different than say, a shank.

For whatever reason, lamb is something I just can't eat. I mean, it's okay. I enjoy it in the style of meat used for gyros. I can SOMETIMES eat it if I am out, although I will rarely order it. Depends on where I am. But it just never really appealed to me.

It can be a little gamey but it's delicious if done correctly. Lamb chops are soooooo good.
