I am thinking about cooking a minestrone for tomorrow. / myLot

Days are getting chillier lately and tomorrow Rosa comes. I will use several leftovers plus some frozen veggies I have to make an awesome minestrone. Today I ate spaguetti with pesto. I´ll add that to some chicken broth and some diced chicken breast I have. The rest will be all sorts of frozen veggies. I have peas, beans and corn. I´ll also fry some diced onion with garlic for the delicious taste I like in my soups. I´m sure that my soup with leftovers will be better that today´s meals.

I made a minestrone last week, if the weather is bad as they say on Friday, I will make it again.

I cooked a medium pot and we finished it at lunch. Rosa ate more (she always does) but I could not have saved enough for dinner.

I am a big soup lover. I have minestrone planned for later in the week, it's so good. I usually have soup for one meal a day, that's how much I like it, but I mostly make my own homemade. I bet your soup will be good.

@marguicha I do, too. I hate instant stuff and all the package mixes for the most part. Often overly processed and who knows how old? It tastes better when we cook it ourselves.
