What's for supper? More chicken and veggies

Hubby was getting tired of all the chicken I made for us the first week in his diet/food plan so this week I've been concentrate more in various casseroles that have more than two servings so he'll have something prepared when I'm working. But, now he's getting tired of those.
I think what he's really getting tired of is our choices for veggies which are mostly zucchini, summer squash, cauliflower and cucumbers. I've also been buying beans, and colored peppers but he's not had any of the latter. I need to work on carrying our veggies.
Problem is there's certain ones he doesn't like much and other ones that thicken the blood. He's on blood thinners and doesn't want to take more blood thinners than he has been. When he went in for a checkup recently he found out that carbs help keep the green veggies from affecting the blood too much. He had been having a salad a couple times per week.
So for tonight we had chicken cooked in the crockpot and zucchini and cauliflower as side dishes. This was his lean and green meal. Then he has fuelings of premade items we picked out to have every two hours to keep his blood glucose from going up and down.
He's been able to eliminate two of his insulin shots but is still taking the rest.

Only thing is we're only two weeks in and he's getting tired of the food choices already. Today I'm going to buy some frozen veggie mixtures to give us something different to eat.
He doesn't want to eat this way the rest of his life- he already wants some of his favorite sugary carbs. I think if he can eat them in moderation it won't be too bad but I'm not sure he can do that as I think he's more addicted to sugar than I am.

@JudyEv he never used sugar in his coffee just creamer and he's allowed a little of that. I've used the sugar substitutes and I don't mind then

@MarshaMusselman I believe it takes some weeks to break a sugar addiction which is basically what it is - an addiction. Is he allowed sugar substitutes? Vince doesn't like the substitutes. He says he can taste the difference.

I always prefer chicken over other meats and chicken casseroles are always tasty,

We never used to eat a lot of meat but now he has to have a lean item which can also be eggs or tofu but he won't eat the latter and then three servings of veggies.
I've been doing egg casserole, hamburger casserole and egg bakes all including some type of veggie.

@MarshaMusselman we don't like cauliflower or cabbage. It's available here and is a very common vegetable. I also need to eliminate food from my diet that increases my blood sugar level as it gets shoot up sometimes and remains normal sometimes.

It's cauliflower not sold there or you've just never tried it? Or you've tried it but don't like it?
He's had to increase the amount of insulin over the years because he kept gaining weight after all his surgeries and also because he was eating too many sweets. Now that he's lost weight from cutting the bad foods out of his diet he's been able to eliminate shoes he was taking after two meals. He monitors it constantly so his numbers don't go to high or low.

Pizza is good too. We can have it on our diet if we don't use a normal crust.

@MarshaMusselman - I also avoid those rich in vitamin K, they contain a too large quantity of fiber.

Yes those veggies are the culprit which change some of the variety in foods he could otherwise eat.

I enjoyed the meal, my husband did not. Actually the veggies were supposed to cook in the crockpot while I did some other things but I ended up having to cook them in the stove after all. Then they all got out together into a casserole and got cooked in the oven.

I had some gourd so I made gourd fritters. I cover them with cane sugar and it is like having something special instead of dinner.

Are the gourds same as a squash? We call them gourds once they've dried out inside but then there not edible.

If I were to drink milk before bedtime is have it warm to help me sleep. But I no longer drink much milk.
