Struggle meals....

With inflation and how much food is costing at the grocery store these days, it has become a necessity to try to make meals that are easy on the tummy and the pocket book.
Previously these meals have been referred to as "struggle" meals. However a lot of the meals I grew up with as struggle meals involved things that are actually pretty expensive now. So that got me thinking with all the different locals, countries or even regions of the states that make up myLot, what are some of the struggle meals you grew up with or that you make to this day?
Are there meals that you grew up on that you longer eat, or refuse to eat because of how often you ate them as a child?

We all have our comfort food and that comes from the culture and household we have grown into. Inflation is hitting hard across the globe.
We make simple healthy home cooked meals. Eating out or ordering is very rare in our family.

Ramen noodles lol! I don't remember other than that really lol.

Were Ramen noodles popular when you were growing up. I can remember cup o noodles, but not really ramen noodles. I know they are basically the same thing.
I ate a lot of hot pockets when I was a kid, but from the age like 11 on, I was home for hours alone after school.

@MommyOfEli2013 I was lucky in high school we had a microwave in our lunch room because we shared it with the high school so I ate a lot of cup a noodles.
We get hot pockets still. The ham and cheese ones are my favorite.

@thislittlepennyearns Well I know we'd eat them at my grandmother's a lot. That might have been more of a teenager thing. I don't really remember cup o noodles as much lol!
Oh yeah, hot pockets...I forgot about those lol. I'd always be at my grandparents after school and we'd have home cooked meals. I mostly had to worry about breakfast, which I think a lot of the time was poptarts or cereal.

Chris is not real big on salads or veggies. She child will eat them with me, but she's not as crazy about them as I am.
Pasta is another one that he's not huge on our list. I don't like spaghetti and between Chris and I are pretty picky about meals. LOL. But I am planning on making some homemade alfredo sauce soon

I don't think there were any. Our family wasn't rich, but we always had food to eat. Of course, we were the same as kids are now to an extent, that we had our favorite foods. I knew some foods were cheaper to fix, of course, but I don't remember not liking them, or having them that often.
Not a struggle meal, but one of my grandmothers loved liver and onions. I love onions, but oh, that liver. Nope, just nope. I do like chicken livers, but not beef or pork liver. I don't think it was a struggle meal though, just something I truly didn't like, and still don't.

When I was a child, legumes were very inexpensive and nutricious. So my mom made them at least once a week. Now they are very expensive here. And I can´t think of any inexpensive food now. Maybe pasta, but it depends on the sauce you make. I did not like legumes then but I like them now. I particularly hated chickpeas when I was a child but now they come peeled and I love them.

I wish I could remember something I could call a "struggle meal," but I honestly don't believe we had any. We were not rich growing up. We were a middle class family. But we ate pretty normal stuff. To this day, I can't think of any "struggle meal" on my table. I have made some adjustments due to inflation. But not that many actually.
I do realize that others are having a much more difficult time with inflation and feel for their struggles. Regardless of our financial situation we all have to make some adjustments—if not out of necessity, out of practicality.
Wish I had something in particular to mention. I simply don't.
