where did the weekend go?

Here it is, already late Sunday afternoon and I can't figure out where the time has gone. Do I really go back to work again tomorrow? Yesterday I didn't do a whole lot, although I made a Pakistani-inspired curry dish from scratch (beef keema with carrots and green beans) for dinner and ordered some things for an upcoming birthday party. Today I'm doing more cooking prep and laundry, and generally getting ready for the week. I haven't seen the other half much this weekend at all; he worked the opening shift yesterday, then took the 17-year-old to his first concert ever in Santa Cruz last night. From the pictures they sent me and the stories they told this morning, it sounds like they had a great time. They both worked again today, so I'll probably see him after 8pm tonight. I have a pork roast in the Instant Pot right now, plus I have a turkey from the freezer sitting in some brine in a 5-gallon cooler in the garage. Both are going to be used in meals this week, although I haven't figured out what to do with the turkey specifically. With the pork, I'm serving it tonight with sauteed cabbage and macaroni & cheese, and another night as pineapple BBQ pork bowls (pork, pineapple, sauteed peppers & onions, served on top of rice or cauli rice and drizzled with BBQ sauce). The turkey will probably end up being roast turkey with sides one night and Pioneer Woman's chicken spaghetti (made with turkey) another night, and one of those meats (likely the turkey) will probably end up being soup one evening. The child with the upcoming birthday has requested tacos for his birthday dinner, and those are being picked up from a local taco place (the birthday just happens to be on that place's half-price taco night, so that works out perfectly). I'm going to have a bunch of leftovers, but that's fine. I can pack up the cooked meat for the freezer and use it later. I'm going to have a smaller check than usual next week because I didn't have enough PTO to cover all the days I was home, so it will be nice to not have to worry about what on earth we're going to eat that week. I don't have work breakfasts prepped at the moment, but I have yogurt and fruit and cereal that I can put together tonight for tomorrow, and I think I still have a breakfast sandwich in the freezer that I can pull out one morning. The kids are preferring cold cereal on school mornings these days, and as much as I dislike giving it to them, it does make for an easy morning for the person getting them up and out the door while I'm at work. I think I just heard the dryer stop, so it's time for me to change over the loads. I hope your weekend has been treating you well! The picture above is my bowl of keema I made last night for dinner.

Busy you figuring out all those meals. We still have two gigantic turkeys in the freezers. I might end up asking the local folks who feed people if they want one.

I still have 2 more turkeys plus a boneless turkey roast in the freezer. Those are the ones that I got free from work in January. I might do the boneless one for Easter if I end up not being able to get a ham.

@sallypup My young ones aren't as young as they used to be... only one of them is in single digit age still, and the 2nd youngest becomes a teenager this year. Two are already adults and another is about to turn into an adult. The youngest still has a lot of fun hunting for eggs on Easter morning. The older ones like to help hide the eggs these days.

@spiderdust Oh nope, sorry. I mean the Korean variety show of Running Man. Though, I like to watch Arnold's Terminator and yes, I do watch Jackie Chan's Bleeding Steel last night too. Oh gosh, my weekend do eaten by those movies

It was very good. Most of the recipes I've seen for it usually have potatoes and peas instead of carrots and green beans, but I was trying to lower the carbohydrate content and had these vegetables on hand. Where did you travel?

I think weekends should pass with the same speed as a Tuesday after a three-day weekend.

Wow. That's too delicious to look. My weekend was my last day of work for the week. After work at 11am, I've ate porridge at office nearby before going home. As of the moment, it's already Monday in my end. My rest day.

The keema looks yummy. I like to prep ahead for my work weeks. I am taking advantage of the start of Spring Break and putting things in the freezer for when I go back.
