Lunches at home.

When I´m at home, I always have cooked rice in the fridge. I like to fry it first with garlic and then cook it. If I´m in a complete hurry, I just fry a couple of eggs. I love that simple dish. But I have my freezer full of different dishes that I have maid and placed there in servings for one person. They can be thawed very quickly. Here, at Dixie´s, I don´t know what we will have. I live alone but she has to feed her husband too. I know that she always has greens washed and dried in the fridge, ready for a green salad. Do you have food ready to eat easily every day?

No but that is a good idea having the rice ready. I learned about the rice, if one cooks it, puts it in the fridge for 12 hours, it loses most of the heavy carbs.

I don´t think that any food can lose carbs in the fridge. I´d check. I believe that´s one of the many food myths. But what I do know and can assure you is that if you cook rice and place it in the frigde in a closed Tupperware, you can have it as good as ever for over a week. And rice is one of the things that you can heat easily in the microwave and it will stay as good as ever.

I also have green washed and dried ready to be used for a salad. I often make pasta for lunch, it takes no time to boil and I prefer to make it just before serving.

I usually have eggs in the fridge. When I just want to do simple cooking, I have fried eggs with noodles or rice.

No, I never have anything prepared like that. Either we start from scratch or we use extra portions of things like Bolognese sauce or fish pie filling that we have made a batch of and then frozen.

I used to cook meals for a week on Saturday; but I can no longer do that. I miss it.

I always try to keep some portions of food in my extra freezer, soups, etc. that can be thawed quickly if needed. I also almost always have some fresh vegetables such as celery, carrots, onions, lettuce or spinach, a tomato or two...I love salad. There are usually a few apples or an orange or two as well. I do better if I keep healthy snacks.

EWW! I can see those moving in your photo!!! Yup! I've always got some meals I made frozen that can be heated up quickly and keep some store-bought things that can be heated up quickly, too. Right now I also have a foot long chicken and cheese sandwich ready in the fridge that I bought two days ago. I keep forgetting it's there.
