We talked about the cream style corn and things to do with it. So I made chicken and corn chowder before I went to work. That is what we had for lunch, and it came out very nicely. Much better than canned. Tonight I made potato patties, some people call them potato pancakes, but I do not put syrup on them so they are not pancakes to me. If you have not had them, they are simple to make. Of course you start with leftover mashed potatoes. Add to that more salt and pepper and some flour. I use self rising but all purpose also works. Stir in an egg, or two if there were a lot of potatoes. Cook them on a hot skillet. I made a bunch of them. Hubby cooked up some hamburger patties and topped them with cheese. We had English cucumbers, and stewed prunes with them. Complete, but simple meal. I am stuffed. We will have some potato patties left for in the morning, to go with sausages.

I always loved them. Some people put onions in them, or corn, but I like them plain.

That all sounds delicious... I've never put syrup on potato patties, either . That sounds disgusting.

@GardenGerty I’d never thought about trying it with rice, maybe with chopped up onions and bell peppers.I might try that and see how it turns out.

These are all mouth-watering food. Now, I'm hungry. I now want potato patties, and I guess I can cook them now, thanks for providing that information. It's the first time I'm hearing of stewed prunes. I didn't know there was such a thing. So, next on the table, hamburger patties and potato patties.

We also use mashed potatoes to make potato patties from time to time.However we don't add pepper to them.

I know people who make them with raw grated potatoes and they do eat those with sour cream and applesauce. I think I hope even sells them.

I make something a bit similar but with raw, grated potato. My Mum always called them 'mock fish' for some reason.

Mock fish. . . the raw grated potatoes are often called latkes. Served with sour cream and applesauce.

I love chicken corn chowder. Progresso makes a decent one. My husband goes nuts for the grated potato pancakes. I can no longer make them which is a shame.
