Off to make a peanut butter pie

My contribution to Easter dinner will be a peanut butter pie. This time I chose to use a chocolate cookie crust. I may drizzle chocolate syrup on the top of it.
I am also taking a couple of salads or dips. Since usually chips are served with each I call them dips. One is corn dip--I have also heard it called ugly dip. I decided on this one this week at school. The teachers brought in tasty food for the paraprofessionals, including the corn dip. I forget how much I love it.
Additionally, while checking my pantry, I realized I could make black bean and corn salad-- it has a can of diced tomatoes with green chilies in it. I put a zesty lime cilantro dressing on it.
We shopped today and chips were on sale so that is perfect. I like to buy the big corn chip scoops for dishes like this.
I am sure my presence will be limited the next three days. I will not have any computer access on Sunday.
Tomorrow, Saturday, I will come here early before we hit the road.

Going on a trip is hard to get to, but fun once I am there. Hubby does not pack or anything, so it is up to me.

@GardenGerty Have you ever considered NOT packing for hubby and letting him wear the same clothes for the entire trip? I bet that would teach him to pack his own clothes.

Very easy. Especially if you buy the pie crust ready made. 8 oz cream cheese, 1 C peanut butter, 2C powdered sugar, tsp vanilla, 8 oz cool whip. Blend it all together and pour into ready pie crust.

I had not, until someone brought it to a school get together years ago. I had to have the recipe. It has sour cream, mayo, corn, pimento and green chili and shredded cheddar.
