What's for lunch?

I finally got to eat that avocado that I talked about on here before, the one that was rock hard. It is now in perfect condition for consumption. I used half of it to make a delicious avocado toast, and the other part will pair with a burger. Do you like avocado toast? This was really good with lemon, a bit of salsa and Everything Bagel seasoning on top.

A Peruvian friend once made toast with a hole in the center that she fried an egg in and then slathered guacamole on the toast around the egg. It was delicious. I don't like avocado otherwise.

That sounds really good. I have seen recipes for eggs cooked in avocado before.

@snowy22315 She called it something but I can't remember what anymore. I wonder how those would taste... I may talk to Pretty and see if she'd like me to make that one morning.

Avocado toast is a nice, healthy, inexpensive little lunch. I love guacamole. I never tried shrimp with avocado, but I am sure I would like it.

@snowy22315 Shrimps with avocado is very good. Guacamole is inexpensive and I like it served with wheat tortillas instead of nachos.
