I Was in the Mood for Pumpkin

I love fall and one of the things I love most about it is everything pumpkin. I have had a can of pumpkin sitting on the shelf for 3 days now and I finally decided tonight was the night I was going to open it and make some delicious pumpkin goodies.
First I made pumpkin bars, then pumpkin muffins, and then with the small amount I had left in the can I made pumpkin overnight oats. I will definitely be enjoying my pumpkin overnight oats tomorrow morning with a cup of coffee.
All of the recipes called for cinnamon, another taste I love in the fall.
Are you a fan of pumpkin or cinnamon flavors in the fall?

Pumpkin chili? That's a new one for me. Is it vegetarian? I haven't made pumpkin brownies, but they sound yummy.

I like pumpkin, this is the season, I buy whole pumpkins that I peel cut in pieces and I use to prepare what I like more. My favorite are pumpkin gnocchi (that I made last Monday) a soft pumpkin cake and creamy pumpkin soup. No cinnamon except in the pumpkin cake.

@Kouponkaren I like pumpkin, but not canned pumpkin, it has a weird texture compared to the fresh product.

@Kouponkaren I don't rightly know Karen..I guess I get sad when I eat pumpkin pie as I miss home, so anything that does that to me, I avoid.

Yes, me too. And my husband loves pumpkin pie. But I must have whipped cream on it. Not my husband. He doesn't like whipped cream. Sometimes I have pumpkin pie for breakfast. My mom loved that.

I do like pumpkin but not all those pumpkin spice coffee drinks. I usually make pumpkin muffins and I do like pumpkin pie. All your goodies sound really good

Oh I LOVE Dunkin Donuts pumpkin spice coffee. My favorite flavor of coffee of all time. It has to be Dunkin though. The goodies were good, except the pumpkin bars came out too soft. Still good though. Sort of like a firm pumpkin pudding!

I prefer butternut squash or similar squashes to pumpkin, but I'm sure there are different varieties available.
You have reminded me that another autumn food I like is sweet chestnuts, and I have some jars of chestnut puree I bought a while ago. They were reduced from £2.30 to 50p each, and I have no idea why because the date on them is November 2024!

@Kouponkaren Oh yes roasted chestnuts are a winter favourite! You can cook them in the microwave too, but you have to be extra careful they don't explode!
Chestnut puree goes nicely in chocolate cakes as well as savoury things.

I have only had chestnuts one time in my life, at someone's Christmas party where they were actually offering 'chestnuts roasting on an open fire." So, what do you make with chestnut puree?
