I finally made those pecan cookies and that recipe is a keeper, for sure.
It's basically finely chopped pecans and brown sugar with a little vanilla and egg white.
Very easy to make and I'm having trouble staying away from them. I put them in the freezer hoping the "out of sight, out of mind" works this time.
I made a yummy veggie venison soup and fried corn bread for dinner today. Dale's outside on the 4 wheeler, spraying for fire ants, I think. If ever there's a list of Satan's finest accomplishments, fire ants will rate close to the top in my opinion.
It feels so good to feel relatively good. The Prednisone seems to be helping my hip and I got a call today scheduling an MRI for it.
Hope you guys are well and enjoying your Friday. Any plans for the weekend? I'm hoping we can go to church Sunday, especially if a friend of ours is preaching the message.

They sound good. They will help you keep your strenth up. Fire ants have now moved into this area...Oh Joy, I remember them from Florida. Sis had a major run in with them.

I'm glad your hip is better. I didn't know that fire ants were so far north. We are starting to celebrate our October anniversary today with some Chinese! Yum! Have a great weekend.

Have you shared that pecan cookie recipe anywhere? My lack of a presence here this month has made me miss a lot. When they gave me prednisone for covid it helped all my aches and pains. I loved it. I hope you find out what is wrong. I just plan to hang out around the house and yard this weekend. I have seen "no bake" pie crusts made of ground pecans.

I'm glad to hear the Prednisone has helped you. I'm on day 10 of a 12 course (30 pills) for probably inflammation in my hip. Trouble is, since steroids suppress our immune system, I think it's causing a flare up of an infection I've been fighting for a month, plus it's given me oral thrush. A double edged sword for me.

Fire ants..I have seen them and remember them..ouch. I agree they are evil incarnate.

I like that there aren't a lot of ingredients and they're gluten free...no flour or butter. Have you cooked with egg whites in cookies? This recipe has the egg whites drizzled into the batter, but I've made cookies where you beat the egg whites, then fold them into the batter. I might try it that way next time.
