After Catalina´s deadly accident, we decided with Dixie that they would not come for lunch today. Dixie has to be with Camila, Carla and Violeta (Camila´s daughter who also lived with Catalina at the same house).
I had not taken out the trout so that is frozen and will keep until they come. But I had cooked some spinach to make a creamed spinach with grated Parmesan cheese as a side. I suppose that I will have to freeze part of it and use it for a soup as spinach does not freeze too well. I also have a lot of shredded cabbage and carrot done by Anita. I think that that will keep because it is too much to be eaten by me although I love coleslaw.
Or maybe I will eat today all the spinach with a tiny potato on the side.
Today I was so sad that my breakfast was small buns with butter and honey. I needed something sweet.

I it. I just ate some leftover coleslaw salad I had and now I´ll go to the kitchen to do the creamed spinach.

I love spinach in soups and added to stews. But, you're right that it doesn't freeze well. The shredded cabbage and carrots should last around 4 days in the fridge before it will start to go bad.

I think I´ll eat the cabbage before it goes bad. I love coleslaw and I´m a pro at making the dressing. And Anita schreds the cabbage to perfection.

I could make pancakes. But I think that I´ll just cook them with cream and Parmesan cheese. I can take that to my bed and get more depressed with news. Our President is at the US with Pres. Biden and of course the Gaza problem is the only piece of news here.

I never lack food. I don´t buy many clothes and I´m now giving away some of what I have. But I spend on good food and I pay for having TV, internet and phone.

I love creamed spinach. I cut it after I cook it and squeeze it. And then I add thick dairy cream and Parmesan cheese. End of the work.
