In a Baking Mood Tonight

I'm not much of a cook, but every now and then I get the itch to be productive in the kitchen. Tonight was one of those nights. I was in a baking mood, so I searched around in the pantry to see what I have available to bake. Turns out I had more than expected, so this is what I'm making tonight: Pumpkin Bread Pumpkin Spice Cookies Lemon Cake with lemon icing Chocolate Fudge Brownies Red Lobster Biscuits Jiffy Corn Muffins Right now, the corn muffins, Red Lobster biscuits, and lemon cake have been completed. The pumpkin spice cookies and pumpkin bread are both in the oven now, and the night will be capped off with the brownies. And although I didn't plan this baking night for any other reason than I felt like baking, I did realize that I have two upcoming Thanksgiving potluck luncheons to go to, one on Friday and one on Saturday. So this urge to bake tonight actually serves me well, and I'll have plenty of goodies to bring to the potlucks. Have you had the urge to bake lately, or take on any large cooking projects?

No, I honestly haven't. I haven't felt like doing much cooking... We've been eating the things I've made earlier this month... I hope you enjoy your foods. (I'd be willing to try your Chocolate Fudge Brownies and the Corn Muffins. We have Jiffy Corn Muffins in the cabinet.)

I haven't had Jiffy corn muffins in a hot minute, but I had a coupon for a free box, so I thought I'd go ahead and make them. They are pretty good. I've had better corn muffins, but I'm not complaining on how these turned out.

@moffittjc Yum cream cheese frosting on pumpkin cookies is good as for chocolate pumpkin cookies they are good I have made them before.

Yes, I frosted the cookies. I used cream cheese icing. Tastes heavenly with the pumpkin. I wonder what chocolate pumpkin cookies would taste like?

I normally would only bake one or two things, but my work schedule has been pretty crazy lately, so I took advantage of a rare free evening to bake a bunch of things.

Do you like to bake in general? I usually get in the baking mood around the holidays, I think it started back when we used to make tons of Christmas cookies to put in tins and give out to all our family members.

I rarely if ever bake. Though I live largely (but not large) on frozen food. That I've cooked in the oven. Does that count?

I live off of frozen meals that I cook in the microwave. But if you cook yours in the oven it would be considered “baking” much more so than my method.

I am the primary cook in the house, so cooking is a must, but no major projects to speak of. Baking is not my forté, and honestly, I don't like sweets anyway and most baked goods just aren't for me. But at least you've got plenty to work with to bring for whatever events necessitate it.

I normally don’t do any of the cooking because I’m just not good at it, but one thing I can usually do pretty well is baking sweet goods. Maybe it’s because I have such a sweet tooth that I actually make sure I do a good job.

Wow, you're baking all that ? You could open your own bakery . I give the baking duties to my daughter now . The last thing I baked were banana muffins for my mom. Next week I gotta do the turkey!

@moffittjc Ah, I could understand that - fire incidents can be scary and traumatic. I hope your daughter will find her way back into the kitchen again. My daughter will bake but just isn't into too much cooking. Meanwhile I know there are girls her age who took pandemic time to learn to cook these fabulous family meals . . . boy, I would love that!

@much2say I would love be that too! My daughter is venturing back into the kitchen, but only really cooks seafood it seems. She’s a huge seafood lover, so she is always making up a delicious seafood dinner for all of us.

I was debating about doing banana muffins along with everything else. But I'll save that for another day. I wish I could get my daughter to bake. Or even cook. She was doing great for a while, but then the heating element inside our oven caught on fire and she was home alone at the time and almost panicked. Luckily, she knew to cut the power to the over right away, and also grabbed the fire extinguisher just in case. Ever since then, she's been reluctant to cook anything.

@jstory07 When it comes to food, I never let anything go to waste. I will eat it, share it, donate it, or whatever I have to do to keep it from going in the garbage can. I love food too much to see it go to waste!

Every now and then I get in a crazy baking mood. It worked to my advantage this time since I have the potluck events coming up. But normally, we’ll eat what we want and then the rest I’ll take into work and give to all the employees who work in my department. I make sure nothing goes to waste.

What a baking extravaganza! Your kitchen must be filled with delightful aromas.I bet your treats will be a hit! Baking can be such a rewarding and therapeutic activity. My husband bakes too for his unwiring session in the kitchen. Haha! this is one of my favourite cake that he bakes.

@moffittjc Maybe the smell of freshly baked goods or the joy of sharing your creations with others makes baking has a way of bringing joy and relaxation. Anyways, I am happy to be the receiver of my husbands de-stressing tactic. Lol.

A man in a baking mood is always a good thing! Right now, baking would be tough. The overhead fluorescent lights in my kitchen need to be changed, and maintenance is slow. Last time, after two months of waiting and me reminding them, my dad got fed up, bought fluorescent bulbs, and changed the lights for me, himself. I love a good potluck!

How hard is it for them to come change out a couple of stinking fluorescent bulbs? Geez! lol A man in a baking mood can be a good thing if said man is any good at baking. Fortunately for my loved ones, I can actually bake better than I can cook.

Well, I guess it’s true I was cooking and not baking, but I started off baking some cookies, so that set my “baking” tone throughout the evening. I think I’ve already gained 10 pounds from eating all those goodies!

I guess the biggest baking was the two loaves of gluten free bread for Dale. We're planning to go to Tammy's for Christmas so I hope to bake chocolate mint squares, snowball cookies, and pecan pies. Too hard to try to keep food cold for seven hours.
