A Delicious Minestrone

If I hadn't mentioned it, although I think I have, it's soup season, and so about once a week or so I pick a soup to make and make up a batch of it. So far, I have made a turkey noodle soup, a kielbasa and bean soup, chili mac, a creamy potato soup and last night I made up a batch of minestrone. There's probably one or two I missed. But of course, like many soups, everyone has their "version" of it, and my minestrone is probably like that. I browned up some pork sausage, then added onions, chopped zucchini, celery and minced garlic. Then I added in fresh, sliced mushrooms. Cooked that for a bit. Then added in a can of diced tomatoes and a can of tomato sauce, plus 4 cups of chicken broth. Next up some oregano and Italian, and later on some noodles. It was delicious, served up with some crushed saltine crackers. Soups for me need to be hearty in order to enjoy them, and this minestrone definitely delivered in that area for me. Trying to decide what to make next. I am thinking beer cheddar or clam chowder.

I like minestrone, I made a goulash soup for my husband today, I do not like very much, but I would love a rich French onion soup. I have to buy French bread and onions.

Minestone is a relative favorite of mine. Always hearty and good. I have never made a goulash soup (at least that I know of) but make goulash all the time. Although I am sure my version of goulash is probably different than that of others. And to me there's a few versions even I make of it.

@porwest There are many different versions of Goulash, I also make different versions according to the ingredients I have at home.

@LadyDuck Yep, that would be sort of my idea of goulash. It's a mix-match and hodgepodge of whatever you can throw at it. And it is usually always good.

Sounds good. I had chicken corn chowder yesterday; but it was from a can. Progresso makes some good soups. Have a good week.

I rarely, if ever, have soup from a can. But I can't say never. Campbell's Chunky and the Progresso ones are good, but IF I have one, it will usually be a generic one.

Most soups are quite economical to make. I can eat soup whatever the season.

Soups are VERY economical. The only requirement for me is that it has to be hearty and a meal in and of itself. I don't like soups that are too brothy and light. But it is a great way to stretch the budget, and even sometimes use some things up.

Your minestrone sounds delicious. I also like creamy potato soup, clam chowder and French onion soup. We have varieties of Chinese soup. I make soup twice or three times a week.

If I made soup that often I'd be inundated. But I make rather large batches worth several helpings. But yes, soup is delicious.
