Lemon ricotta cake is in the oven

I made this once before and it was delicious! I have a zillion lemons to use up and I had ricotta cheese in the fridge so it was a no-brainer. I'll enjoy a slice tonight and bring the rest of it into work tomorrow for the scavengers in the faculty room.

That sounds good, I do like lemon flavour and especially cakes that are not overly sweet. I will try that!
