I forgot I had bought five huge russet potatoes until my daughter cooked one in the microwave. As I came downstairs, I could smell that potato's deliciousness and knew I had to have one as well.
Hers had butter, sour cream and a section of diced green bell pepper (capsicum). She said it was wonderful. But I knew I had a can of chili that needed eaten, so went to the kitchen and got everything together. While the potato was cooking, I opened the chili and spooned some onto a plate to be heated up. After 9 minutes, the potato was perfectly cooked. I squeezed it open and added my butter, sour cream and cheese while the chili heated up. Then I poured the hot chili over top. I am so happy I made it because that just hit the spot perfectly.

I love chili on a baked potato. I don't need butter or cheese, but I do enjoy a bit of sour cream on it. A good dinner, for sure.

I am kind of a purist when it comes to chili. I don't really want cheese on top. But I understand the butter if the potato is dry, then it's necessary!

@MarieCoyle I was never a cheese on chili person and don't do it all the time. But I knew this calmed chili would need help. And it's similar to adding sour cream with the dairy factor.
