Jay Asked for More Potato Salad

We just finished the potato salad on Wednesday. Jay has asked me to please make some more, which I have all the ingredients to stir some up.
My husband very seldom asks for certain food, so this was a surprise to me, as his wife. It's no big deal, a compliment means a lot to a woman.
One thing about Jay, he never beefs about the meals that I fix. That would be a hard lump to swallow, if he constantly criticized and complained about my food choices.
About a month ago, Jay made a huge pot of chili. By the end of the week, I was so sick of warmed up chili. I didn't care if I never tasted another bowl, ever! Yet, I didn't want to make him feel bad and kept these evil thoughts to myself.
Anyway, I'm off to the kitchen to get the salad fixed.

I took that as a compliment. Some potato salad that's sold in the store, we don't like it.

No, I just add my own ingredients, according to taste. I know what we like, so that's what I put in.

I don't like chili that very spicy. It burns my insides, from the spices.

When I make too much of something like chili, or soup, that surplus goes into freezer containers in two portion increments. That is after we have eaten it three or four times. However, things with peppers tend to get hotter when frozen and thawed. Not sure why. I always make too much chili. Potato salad sounds good.

When the kids were at home, I used to cook larger portions. Now that it's just the two of us, I had to scale down those portions, just like you do.

Good to know Jay is a fan of your food. You might enjoy the Latvian version of potato salad. The ingredients can be changed or omitted. In the end, it should be creamy with mayonnaise. For the sauce, my mom made a mix of mayo, sour cream, and mustard and she omitted the vinegar. In my salad, I chop up ham as well or smoked sausage. It is a salad you can make and eat for a couple of days, particularly in the hot summer.

I sometimes add eggs and definitely, omit the vinegar. Jay loves smoked sausage!
