I'm Looking Forward to My Dinner Tonight

Every so many months I get another package of salmon from HSN. I love it! I get 12- 6 ounce filets. Usually, you get a 4-ounce filet in restaurants and such. I do pay a bit of coin for it but it is worth it and I can make payments on it. I love salmon and trout. My kids sometimes will eat it and sometimes they won't. So, when they don't want it I get double the amount. Tonight we are having salmon baked in bourbon sauce. I bake it in aluminum foil. It comes out so tender, moist, and tasty. Plus a baked potato. Now you all should know by now how much I love potatoes. A well-baaked potato with pepper, butter, and sour cream. Now doesn't that sound good to go with my salmon? I think so.
And, as if that weren't enough... For dessert, I am having Jamaican Almond Fudge ice cream. Oh, yeah! It tastes so delicious.
